{"id":95,"date":"2020-05-20T17:14:12","date_gmt":"2020-05-20T17:14:12","guid":{"rendered":"https:\/\/www.jaderiderjourneys.com\/cookbook\/?p=95"},"modified":"2020-10-01T17:49:23","modified_gmt":"2020-10-01T17:49:23","slug":"biscotti","status":"publish","type":"post","link":"https:\/\/www.jaderiderjourneys.com\/cookbook\/2020\/05\/20\/biscotti\/","title":{"rendered":"Biscotti"},"content":{"rendered":"<p><span class=\"label\">Prep time:<\/span>&nbsp;<span class=\"preptime\">30 Minutes<\/span><\/p>\n<p><span class=\"label\">Cook time:<\/span>&nbsp;<span class=\"cooktime\">1 Hour<\/span><\/p>\n<p class=\"yield\"><span class=\"hrlabel\">Yield:&nbsp;<\/span><span class=\"hritem\">24-30 biscotti<\/span><\/p>\n<h4 class=\"ingredient-title\">Ingredients<\/h4>\n<ul class=\"ingredients\">\n<li class=\"ingredient\">250g (9oz) plain flour, plus extra for dusting<\/li>\n<li class=\"ingredient\">\u00bd tsp baking powder<\/li>\n<li class=\"ingredient\">250g (9oz) caster sugar<\/li>\n<li class=\"ingredient\">3 medium free-range eggs, beaten<\/li>\n<li class=\"ingredient\">200g (7oz) chopped hazelnuts<\/li>\n<li class=\"ingredient\">1 large orange, finely grated zest only<\/li>\n<\/ul>\n<h4 class=\"direction-title\">Directions<\/h4>\n<ol class=\"directions\">\n<li><span class=\"txt\">Preheat the oven to 300\u00b0 and line a large baking tray with baking parchment.<\/span><\/li>\n<li><span class=\"txt\">Mix together the flour, baking powder and sugar in a bowl and add the eggs slowly to make a dough. <\/span><\/li>\n<li><span class=\"txt\">Mix in the hazelnuts and orange zest.<\/span><\/li>\n<li><span class=\"txt\">On a lightly floured surface, knead the mixture gently and divide into 2. Roll into logs, each approximately 25cm (10in) long. Place on the lined baking tray and bake for 25 minutes.<\/span><\/li>\n<li><span class=\"txt\">Remove from the oven, leave to cool slightly, then cut each log into 1\u00bd-2cm (\u215d-\u00bein) thick slices. Lay the slices on the baking tray.<\/span><\/li>\n<li><span class=\"txt\">Return the tray to the oven and bake for another 5-7 minutes, turn over and continue to bake for another 5-7 minutes until golden-brown.
