{"id":113,"date":"2020-10-01T17:22:35","date_gmt":"2020-10-01T17:22:35","guid":{"rendered":"https:\/\/www.jaderiderjourneys.com\/cookbook\/?p=113"},"modified":"2020-10-01T17:32:15","modified_gmt":"2020-10-01T17:32:15","slug":"pork-vindaloo","status":"publish","type":"post","link":"https:\/\/www.jaderiderjourneys.com\/cookbook\/2020\/10\/01\/pork-vindaloo\/","title":{"rendered":"Pork Vindaloo"},"content":{"rendered":"<p>MAKES 4-6 SERVINGS 2+ HOURS<\/p>\n<p>4 dried guajillos, stemmed, seeded, and roughly chopped<br \/>\n3\/4 cup water<br \/>\n1 1\/2 inches of ginger, roughly chopped<br \/>\n6 garlic cloves<br \/>\n1 tablespoon paprika<br \/>\n1 tablespoon cumin<br \/>\n2 teaspoons loose black tea (about 2 teabags)<br \/>\n2 teaspoons table salt<br \/>\n1 teaspoon black pepper<br \/>\n1\/2 teaspoon cayenne<br \/>\n1\/2 teaspoon cinnamon<br \/>\n1\/2 teaspoon ground cardamom<br \/>\n1\/4 teaspoon ground cloves<br \/>\n1\/4 teaspoon ground nutmeg<br \/>\n3-4 lbs boneless pork butt roast, trimmed and cut into 1&#8243; cubes<br \/>\n1 tablespoon vegetable oil<br \/>\n1 onion, finely diced<br \/>\n1\/3 cup apple cider vinegar<\/p>\n<p>Preheat the oven to 325, with the rack in the center position.<\/p>\n<p>Bring water to a boil. Add guajillos and soak until softened, about 10 minutes.<\/p>\n<p>In a food processor, all ingredients, including guajillos, through nutmeg. Blend until a smooth paste has formed. In a large bowl, mix pork cubes and spice paste.<\/p>\n<p>Heat a large Dutch oven over medium heat and add oil. Add onion and cook, stirring frequently, until soft and golden, about 8 minutes. Add pork mixture and stir to combine.<\/p>\n<p>Once the liquid is bubbling, cover the pot and transfer to the oven. Cook for 50 minutes.<\/p>\n<p>Remove from the oven, stir in vinegar, then put back in the oven and cook for another 30 minutes. Pork should be fork-tender.<\/p>\n<p>Let stand, uncovered, for 10 minutes before serving.
