{"id":102,"date":"2020-05-20T17:28:23","date_gmt":"2020-05-20T17:28:23","guid":{"rendered":"https:\/\/www.jaderiderjourneys.com\/cookbook\/?p=102"},"modified":"2024-09-25T17:06:26","modified_gmt":"2024-09-25T22:06:26","slug":"an-artisan-bread-recipe","status":"publish","type":"post","link":"https:\/\/www.jaderiderjourneys.com\/cookbook\/2020\/05\/20\/an-artisan-bread-recipe\/","title":{"rendered":"An Artisan Bread Recipe"},"content":{"rendered":"<p>Prep Time 5 hours<\/p>\n<p>Cook Time 30 minutes<\/p>\n<p>Total Time 5 hours 30 minutes<\/p>\n<p>Servings 4<\/p>\n<p>Author Chef Billy Parisi<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>560 grams of 00 bread flour<\/li>\n<li>190 grams of whole wheat flour<\/li>\n<li>600 grams of water at 98\u00b0 to 100\u00b0 F or 36-37\u00b0 C<\/li>\n<li>17 grams of Kosher salt<\/li>\n<li>3 grams of active yeast<\/li>\n<\/ul>\n<p>Extras for the process:<\/p>\n<ul>\n<li>All-purpose flour<\/li>\n<li>Rice flour<\/li>\n<\/ul>\n<p>Instructions:<\/p>\n<ol>\n<li>In a large bowl combine with your hands the flours. Add water until completely mixed together. Let rest for 10 minutes.<\/li>\n<li>Next, sprinkle, first the yeast, making sure it had been incorporated into the dough.<\/li>\n<li>Do the same with the salt.
